Monday- Fajitas- Either cut your own strips of chicken or steak or purchase the pre-made/ pre-sliced fajita meat and cook with a packet of fajita seasoning. Throw in slices of onion, tomato, and bell pepper for a true fajita mix. Serve on warm tortillas with sour cream, guacamole, salsa, and pico de gallo.
Tuesday- Hamburger Steak
Wednesday- No meal planned of this night.
Thursday- Ham- Use a small ham and heat with pineapple and brown sugar or soda. Mmmmm. Serve with your favorite sides.
Friday- Italian Chicken- Lay boneless, skinless chicken breasts in a pan and douse with italian dressing. Cook thoroughly. I'm not a big fan of lemon pepper chicken so we use this method more often.
Saturday- Hot dogs and kraut on a bun. Apple cooks this for us. Sometimes we heat up some chili to go with it as well.
Sunday- Hamburger soup- There are lots of versions of this. I like to saute onion, celery, and shredded carrots with basil and oregano. Cook the ground beef and drain. Add the meat and veggies to the slow cooker or a large pot. Cover with beef broth and allow to simmer for awhile to let the flavors marry. Right before serving cube up Velveeta and put it in the soup. I also add shredded cheddar. Let the cheese melt then serve with bread or chips. So tasty when it is cold out.
